An easy sauce packed full of veggies

We use this sauce for pasta bakes, curries, stews, a base sauce for homemade pizzas and even mixed into the meat mixture for meatballs and homemade burgers
Ingredients
Whatever vegetables you have, roughly chopped into bitesize chunks - I often use cabbage, onion, carrot, swede, and whatever else I have in the fridge
1tbsp olive oil
Stock (any one you like)
1-4 Cloves of garlic, sliced or chopped
Whatever spices you are in the mood for
Instructions
Roughly chop an onion (if using one) and sauté gently with the olive oil in a large saucepan
When the onion is translucent, add the vegetables (except garlic) and stir to cover with the oil
When the vegetables are coated, add the garlic and spices and stir for about a minute, until fragrant
Add stock to almost cover the vegetables, and leave on a gentle simmer for 10-15 minutes, or until the vegetables are very soft
Carefully (it's hot!) pour the vegetables and all the water into a food processor and blend until smooth
Use in your meal or freeze in portions for quick additions to any future sauce
