(Slightly) Healthier Chocolate Fudge Cake

A slightly more nutritious version of classic NZ chocolate fudge cake

Ingredients

  • 2 packets wine biscuits

  • 4 tablespoons cocoa

  • 1/2 cup raisins

  • 1/2 cup seeds/chopped nuts

  • 1 tablespoon psyllium husk (optional, dietary fibre)

  • 1/2 cup milk

  • 180 grams butter

  • 1/4 cup honey


Instructions

  1. Crush the biscuits in a food processor or by placing them in a large ziplock bag and beating them well with a rolling pin.

  2. Place them in a large bowl with all the other dry ingredients (for baking with twins, split everything between two bowls, give them each a spoon to stir).

  3. Melt the butter and honey, mix in the milk.

  4. Pour the liquid into the dry ingredients (again, if baking with twins just divide it between their bowls).

  5. Stir until well combined.

  6. Line a slice tin with baking paper (about 20x30cm tin).

  7. Press the mixture into the tin, press it down hard to make it really compact and solid.

  8. Chill until set hard.

  9. If you want, ice with chocolate icing but this is optional. If you do this, you can also then scatter all sorts of treats over the icing, such as a sprinkle of coconut, or leftover crushed up easter eggs...

  10. Slice into squares, feed to your children (you can store in the fridge for a good week or so, or in the freezer).
