Cheese biscuits

Puffy pastry-like cheese biscuits, everyone loves them


My toddlers think these are cookies, yet they are relatively healthy, sugar free snacks!


Ingredients

  • 200 grams grated cheddar cheese (use a mix of any hard cheese for different tastes)

  • 50 grams butter 1 cup plain flour (you could use wholemeal)

  • 4 tablespoons water

  • Optional - pinch of cayenne (for older kids/adults)


Instructions

  1. Place flour, cheese and butter in food processor. Blend until like breadcrumbs.

  2. Add water, blend until it comes together

  3. Pat the dough into a ball, wrap in clingfilm and refrigerate for 30 minutes

  4. Heat the oven to 180 degrees celsius, line a flat tray with baking paper

  5. Take your dough out of the refrigerator. Knead a little, then flour your work surface and roll the dough to 1cm thick. Then fold it in half, roll again to 1cm thick.

  6. Cut into shapes or slice into small squares. Place on tray and bake for about 10 minutes, until golden.
